Replenishment in a series of monographs of university scientists

Employees of the Department of Production and Processing of Food Products from Plant Raw Materials of the Stavropol State Agrarian University, Candidate of Technical Sciences, Associate Professor E.A. Sosyura and candidate of Agricultural Sciences, Associate Professor Romanenko E.S. together with the staff of the National Center for Wine Production of the North-Caucasian Federal Scientific Center for Horticulture, Viticulture, and Wine-Making (Krasnodar) Doctor of Agricultural Sciences, Professor Guguchkina T.I. and candidate of Technical Sciences Burtsev B.V. have been published a monograph entitled “Development of a Functional Drink Technology Based on Grape Juice”.

Providing the population with high-quality food in a wide range is an important task for the food industry. Around the world, and more recently in our country, along with the production of soft drinks, beverages based on plant-based ingredients have become increasingly widespread. The problem of creating new types of products with a wide range of physiological effects is now becoming of paramount importance.

The monograph presents the results of research on the development of technology for the production of high-quality drinks based on grape juice of direct extraction with high nutritional and biological value due to the inclusion in their composition of extracts from vegetable raw materials.

The monograph is intended for practical use by researchers, managers and specialists of processing enterprises, for full-time and part-time students of agricultural and technological universities in the direction of "Food from vegetable raw materials".
