The monograph presents the results of laboratory, field, and production experiments of scientists from Stavropol State Agrarian University, North Caucasus Branch of the Federal Research Center for Agroecology, Integrated Land Reclamation and Protective Foresting of the RAS, as well as employees of OOO Krymskaya Stevia (Sevastopol).
The monograph “From sprout to functional product of healthy nutrition” was prepared by: Rector of Stavropol State Agrarian University, Academician of the Russian Academy of Sciences, Doctor of Agricultural Sciences, Professor, Doctor of Economic Sciences, Professor Vladimir Ivanovich Trukhachev, Doctor of Agricultural Sciences Galina Petrovna Starodubtseva, Doctor of Agricultural Sciences Olga Vladimirovka Sycheva associate professors: Svetlana Ivanovna Lyuba, Inna Anatolievna Donets and Elena Alekseevna Skorina, and so Director of the North-Caucasian branch FGBNU "Federal Research Center of Agroecology Hasan Abdulkadirovich Surhaevym.
The monograph presents proven technologies of growing seedlings and plants of stevia, narrow-leaved fireweed, virginian persimmon, unabi (Chinese date) and other rare plants from different soil-climatic zones of the Stavropol Territory and the Crimea tested by many years of testing. Proposed technologies for the processing of vegetable raw materials and the production of functional foods: bread and dairy products; various herbal tea compositions with high taste and functional properties.
The authors were awarded diplomas of I degree, as well as gift certificates.
