Scientists of the Stavropol State Agrarian University are conducting active scientific work in various fields. Together with the North Caucasian branch of the Federal State Budgetary Scientific Institution Federal Research Center for Agroecology, Complex Reclamation and Protective Afforestation of the Russian Academy of Sciences, studies were carried out and a monograph “From seedling to a functional healthy food product” was published.

Many years of fruitful cooperation between scientists of the Stavropol State Agrarian University and one of the largest publishers of the Russian Federation of natural science literature for higher education - “Lan”. The relevance and quality of training papers prepared for publication is confirmed by their relevance and use in the educational process by higher educational institutions as compulsory literature.

The publishing house "Lan" published a monograph "From the seedling to the functional product of a healthy diet" by a team of scientists: V.I. Trukhachev, G.P. Starodubtseva, O.V. Sychevoy, S.I. Luboy, (Stavropol State Agrarian University), Surkhayev A.G. (North Caucasian branch of the Federal State Budgetary Scientific Institution Federal Research Center for Agroecology, Complex Reclamation and Protective Forestation of the Russian Academy of Sciences).

The paper presents the results of many years of testing the technology for growing seedlings and plants of stevia, fireweed narrow-leaved, persimmon virginia, unabi (Chinese date) and other non-traditional plants from different soil and climatic zones of the Stavropol Territory and Crimea. New technologies are proposed for the processing of plant materials and the production of functional foods: bakery and dairy products, various compositions of herbal teas that are distinguished by their taste and functional properties. The monograph presents the results of laboratory, field, production experiments of scientists of the Stavropol State Agrarian University, the North Caucasus branch of the Federal Research Center for Agroecology, Complex Reclamation and Protective Afforestation of the Russian Academy of Sciences, as well as employees of LLC “Crimean Stevia” (Sevastopol).

The monograph will be useful to students, masters, graduate students. The theoretical material presented is accompanied by detailed examples.
