For the students of "Professionality" the teacher of the educational and methodological department of the faculty of secondary vocational education, candidate of agricultural sciences Elena Menkina held a practice-oriented lesson "Determination of sugars in fruits and vegetables by the refractometric method."
Sugars, as chemicals, have properties that allow their presence to be detected and quantified using various physicochemical methods of analysis. Students learned how to determine the amount of sugar in fruits using a refractometer purchased under the Priority 2030 and Professionality federal projects. The guys also concluded that the content of glucose, fructose and sucrose in the pulp of vegetables and fruits depends on their type, variety, growing and storage conditions, and degree of maturity. Determination of the sugar content index is necessary to identify the nutritional value, commercial qualities of products, varietal characteristics of cultivated crops, and optimization of cultivation conditions.
