The implementation of the HACCP system in enterprises

On the basis of the SSAU educational and research testing laboratory from 10 to 12 February 2015, the extension courses were organized for the specialists of enterprises of different processing industries of Stavropol Territory agribusiness on the program "The development, implementation and maintenance of the food safety management based on HACCP principles". The organizers were the Department of Technology of Production and Processing of Agricultural Products of the Technological Management Faculty, the SSAU educational and research testing laboratory, the head of courses was Professor G.P. Starodubtseva.

In accordance with the requirements of TR CU 021/2011 "On food safety", a manufacturer has to develop, implement and maintain procedures based on the principles of Hazard Analysis and Critical Control Point (HACCP). The absence of such system on enterprises will not allow the company to confirm the compliance of products with legal requirements.

A program was developed and implemented for trainees including topical issues of a rational approach to the creation of the HACCP system in processing plants. Highly experienced professionals: GBU Director of SC "Center for testing the quality of products" Larisa Fissenko, President of research and production agency of modern management techniques Larisa Alekseevna Rykalina (Volgograd), Head of the organization to ensure epizootic veterinary-sanitary health and welfare HC S.C. Andrei Petrovich Tsapko, Professor of SSAU Olga Sycheva were invited for lectures.

Head of Quality Control Ltd. "Cheeseberry" Iana Petrovna Pelymsky (Mikhailovsk) and Head of Quality Management of "Narzan" Elena Timofeevna Chebykin (Kislovodsk) shared their experience in implementation of this security management system in their companies.

Listeners expressed their opinion about the high level of organization and the undoubted benefits of the knowledge gained.
